Happy Monday!

Good morning, friends!

How has your week begun?  I've found that if I've spent some time planning on Saturday or Sunday, I can start the week in high gear.  I've also noticed that by Thursday afternoon my energy is pretty well spent.  The "why's and wherefore's" of such a phenomenon I'm not sure of, but, realizing that it is true, I've rearranged my schedule a little and put most of my high energy, high concentration jobs during the first half of the week, leaving Thursday and Friday for projects like card-making and other tasks that don't require as much focus.  So, after putting on my pretty piano CD that I mentioned last week, I have been busy around the house this morning making Breakfast Pizza, doing laundry, sweeping, cleaning out the refrig and pantry, and I even answered emails and balanced the checkbook!  Can I share the Breakfast Pizza recipe with you?  It's SO easy and good!!


Scatter frozen hash browns to cover the bottom of a 9" pie pan.  Sprinkle with shredded cheese.  (I use Colby-Jack).  Add a layer of browned breakfast sausage.  (I usually use 1/2 lb of sausage and save the other half for another day!)  Now crack 5 eggs into a bowl and add salt (about 1/2 tsp?) and pepper and a little milk or cream.  Mix them well and pour them over your other ingredients in the pie plate.  Make sure everything in the plate is covered with egg mixture and sprinkle with parmesan cheese if desired.  Bake at 350 for 25 to 30 minutes or until a knife comes out clean when poked in the center.  ENJOY!
